Why the machine matters

The machine is not the whole story, the barista and the bean matter more, but it sets the ceiling. A temperature-stable machine paired with a good grinder lets a skilled barista repeat a great shot all day. That is why we put the machine and the grinder on every listing.

The names you will see

La Marzocco is the most common workhorse in serious bars. Victoria Arduino and Sanremo are prized for control and stability. Kees van der Westen machines are hand-built and rare. Slayer is built around flow control for long, sweet shots.

And the grinder

Enthusiasts will tell you the grinder matters as much as the machine. A Mahlkönig EK43 on filter, or an E80 on espresso, is a signal that a cafe has invested where it counts.
