Opened in April 2015 by engineer-turned-barista Pedro Sierra Pradas, Virgen is the original specialty cafe in Seville and still one of its best-regarded. The compact, take-away-focused counter sits immediately behind the Metropol Parasol and serves espresso drinks alongside V60 and AeroPress filter options. Pedro now sources exclusively through Mr. Chava in Osuna, widely credited as the father of specialty coffee in Andalusia.
