A reservation-only roastery bar at 30 rue Dussoubs where owner-roaster Joachim Mure roasts on a Loring S7, applying an ultra-light approach to preserve each origin's terroir character. No takeaway cups, no pastries and no music; the format is a guided tasting seated at the counter. Roasts its own coffee.
