The cup
A specialty coffee bar and natural wine shop opened in 2020 by Sara Pastor and Juan Camilo Díaz at Carrera de San Francisco 12 in La Latina. The coffee programme is built around La Noria Coffee Project, a farm in Colombia owned by the Díaz family, giving the bar a farm-to-cup traceability rarely found at this scale; natural wine from small European producers completes the list, making Pastora one of the more distinctive independents in the southern barrios of Madrid.
