The cup
Founded in 2009 by Hippolyte Courty, a former wine professional, at 10 rue du Nil in the Sentier district; the company was among the first Paris roasteries to build direct-ownership relationships with its source farms. Since 2019 Courty has farmed biodynamic parcels in Peru (Finca Mariposa) and Ethiopia (Golden Farm), and the flagship serves espresso on a La Marzocco GS/3. Roasts its own coffee.
