The cup

Small roastery-cafe in a narrow Balat side street, founded and run by Metin Benbasat. The 1.5 kg Probatino roaster sits in the centre of the room alongside the espresso bar. Balat is a historically Jewish and Greek neighbourhood near the ancient Ahrida Synagogue, now popular with creatives and independent food makers.
